Hospitality (Professional Cookery) - NVQ 3 (No. 7083 )

Does being in Gordon Ramsay or Gary Rhodes' shoes tickle your learners' taste buds? Well if they are already a dab hand in the kitchen then a City & Guilds qualification in Hospitality (Professional Cookery) will help turn their cuisine possibly into Michelin star quality.

The emphasis of this level 3 qualification is on professional cookery with units that demonstrate that they can prepare and cook a wide range of food including:

  • preparing meat for complex dishes
  • cooking and finishing complex dishes
  • preparing, finishing and presenting canapés and cocktail products
  • maintaining food safely when storing, preparing and cooking food.

Who is it aimed at?

The level 3 Award in Hospitality (Professional Cookery) is aimed at learners progressing from the level 2 NVQ in Hospitality.


Qualification structure

The qualification has three routes:

  • Preparation and Cooking
  • Patisserie and Confectionery
  • Professional Cookery.

The mandatory units for all three routes are:

  • Establish and develop positive working relationship in hospitality
  • Maintain the health, hygiene, safety and security of the working environment
  • Maintain food safety when storing, preparing and cooking food.

How are learners assessed?

Learners are assessed on the job, in their workplace through a portfolio of evidence.

After completing this qualification, learners can go onto the following qualifications:
