Sustainability in Professional Kitchens (7019)

City & Guilds, alongside WRAP (Waste and Resources Action Programme), PACE (Professional Association for Catering Education), People 1st and Academy of Culinary Arts, have developed 6 award sized qualifications looking at Sustainability in Professional Kitchens.

These can be delivered as stand alone awards, as CPD or as part of enrichment activities alongside existing cookery qualification to increase the chef/learner’s awareness around sustainability including sustainable practice and waste prevention and management within professional kitchens.
These qualifications are aimed at chefs/learners who want to further develop their awareness around sustainability within professional kitchens including issues such as waste management and food sourcing.
Available to deliver in the following:
  • England
  • Wales
  • Northern Ireland

General Information

What Is Involved In Studying This Course?

You'll cover things like: 
  • Sourcing and purchasing sustainable commodities
  • Sustainable practice
  • Waste prevention and management.

Level 2 assessment will be through multiple choice paper and level 3 short answer questions.

These qualifications can help you to progress within the industry as a chef.

What Is Involved With Delivering This Course?

In order to offer this award you will need suitably qualified staff to carry out training and assessment.

You will also need suitable facilities to carry out the required training to enable learners to achieve industry standards.
Centres may design course programmes of study in any way that best meets the needs and capabilities of their candidates and satisfies the requirements of the qualification.

When designing and delivering the course programme, centres might wish to incorporate other teaching and learning that is not assessed as part of the qualification. This might include the following:
  • literacy, language and/or numeracy
  • personal learning and thinking
  • personal and social development
  • employability

Centres can gain fast track approval, onto the 7019 qualifications, if currently offering any of the following: 7100-82, 7100-12, 7132-07, 7132-08, 7100-83, 7100-84, 7133-01, 7133-02, 7133-03.

There are no eligibility requirements.

Level 2
