Paul Kitching's journey - from a City & Guilds qualification to a Michelin-starred restaurant

Paul has been working in the catering industry for over 20 years. Having initially started out in construction, he realised it wasn’t for him and quickly began his journey into cookery. He began his career with a City & Guilds qualification in Professional Cookery at Newcastle Polytechnic, and from then he continued to build on his skills, working at a number of restaurants across the UK.

Today, he is a well-renowned, Michelin-starred chef, heading up Edinburgh’s landmark 21212 restaurant. In April 2012, he was named City & Guilds’ Prince Philip Medallist.
